Quinoa

 Ingredients:

	1/2 onion, chopped
	1 clove garlic, chopped
	1/4 cup uncooked quinoa
	1/2 cup chicken broth
	1/2 teaspoon cumin (or more)
	1/3 cup frozen corn
	1 can black beans, rinsed & drained (or less)
	1/4 cup chopped fresh cilantro

Instructions:
	Sauté onion and garlic. Add quinoa, broth,cumin. Simmer 20 minutes. Stir in corn & simmer 5 minutes. Stir in black beans and cilantro and heat just until beans are warmed.

Notes: Substitute Edamame and teriyaki sauce for the beans corn and cumin to make this an Asian side dish
