Ham, Broccoli with Puff Pastry Crust

 Ingredients:

	1 sheet frozen puff pastry thawed
	1 egg beaten with 1 Tbsp water
	1/4 cup butter
	1/2 cup flour
	2 cups milk
	1/4 cup coarse-grain Dijon mustard
	1 bag (16 oz) frozen broccoli cuts
	12 ounces boiled ham, cut in 1/2 inch cubes
	1/2 cup thinly sliced green onions

Instructions:
	Heat oven to 375
	Unfold pastry and trim to an 8 inch square
	Place on ungreased cookie sheet
	Brush top with egg mixture
	Bake 20-21 minutes until brown
	Melt butter and add flour and stir until smooth and frothy
	let mixture bubble about 3 minutes, stirring often
	Graduall stir in milk, then mustard until blended
	Increase heat to medium and simmer until it thickens
	Stir in broccoli, ham and onions
	Return to simmer and cook 5-7 minutes
	Pour into square 8 or 9" pan
	top with baked crust and serve immediately
