Fish and Vegetable Kabobs with Tomato-Herb Sauce

 Ingredients:

	1 large fresh tomato, cut into chunks and seeded
	1/2 cup fresh parsley leaves
	1/2 tablespoon olive oil
	1 clove garlic
	1/2 teaspoon dried oregano
	1/2 pound fish fillet, about 1 inch thick, cut into 12 chunks
	1/2 medium onion, cut into wedges
	1 medium zucchini cut into chunks
	1 cup cooked couscous

Instructions:
	Combine first 5 ingredients in blender. Pulse until tomato is finely chopped. Set aside.
	Place fish, onion and zucchini on broiler pan, or thread on skewers. Broil or grill until fish is done.
	Serve with sauce and couscous.
