Ingredients:
1/2 can petite diced tomatoes 1/4 onion, chopped 1 clove garlic, chopped 1 pinch Italian seasoning 12 green olives, chopped 2 Tablespoons apple juice 1 teaspoon lemon juice 6 basil leaves, chopped 2 tablespoons grated Parmesan cheese 1/2 pound flounder fillets Instructions: Saute onion. Add tomatoes, garlic and Italian seasoning; heat through. Add olives, lemon juice and apple juice, and basil. Reduce heat, add Parmesan cheese. Cook until the mixture is reduced to a thick sauce, about 15 minutes. Place flounder in a shallow baking dish. Pour sauce over the top. Bake 12 minutes at 425'.
