1 cup raw quinoa 1 small onion, diced 1 green pepper, diced 1 clove garlic, minced 1 tablespoon chili powder 1 teaspoon cumin 2 cans chicken 2 cups enchilada sauce 1/2 cup Cheddar cheese diced avocado salsa olives sour cream Instructions: Preheat oven to 350' Cook quinoa. Saute onions and peppers 3 minutes. Add spices and chicken; heat through Add quinioa and enchilada sauce; mix until combined Turn into greased casserole dish, top with cheese, and back 10-15 minutes. Serve with toppings. Avocado really makes this dish.
