Ingredients:
1/2 small onion, chopped
1 lb butternut squash, peeled, seeded, and cubed
2 cloves garlic
1 egg
3 tablespoons sour cream
1/4 cup Parmesan cheese
4 teaspoons crushed basil
4 oz mozzarella cheese
Instructions:
Cook squash. Saute onions, stir in squash and garlic. Place in 8x8 pan. Whisk egg, stir in sour cream, Parmesan, basil. Pour over squash mixture. Top with mozzarella.
bake at 425' about 30 minutes.
