Slow Cooker Lasagna Soup

 Ingredients:

	1 teaspoon oil
	1 cup finely chopped onion
	1 cup finely chopped celery
	1 cup finely chopped carrots
	1 lb turkey or chicken Italian sausage, removed from casing
	8 oz sliced mushrooms
	2 cloves garlic, minced
	1 28-oz can crushed tomatoes
	4 cups chicken broth
	2 tablespoons tomato paste
	8 oz lasagna noodles, broken into 2 inch pieces
	2 tsp dried basil
	2 tsp dried oregano
	1 tsp salt
	6 tablespoons cottage cheese
	1 tablespoon Parmesan cheese
	1 tablespoon chopped parsley

Instructions:
	Saute onion, carrots and celery.
	Add sausage and cook until done.  Add mushrooms and garlic and cook for 5 minutes.
	Combine all ingredients except noodles, cheeses, and parsley in crock pot.
	Cook on low four hours.  Add noodles, cook additional 3 hours.
	Mix cheeses and parsley in small bowl.  Top each bowl of soup with dollop of cheese mixture.

Notes: This is very thick, more like a stew.
