Ingredients:
1/2 lb boneless skinless chicken breast 1/2 medium onion, chopped 1 to 2 teaspoons green chilis, minced 2 teaspoons dried oregano 1 teaspoon ground cumin 2 cloves garlic, minced 2 cans cannellini beans, drained and rinsed 1 1/2 cups chicken broth 1 tablespoon instant mashed potatoes (dry) shredded cheese, sour cream (optional) Instructions: Saute onion and chicken. Add spices, chilis, and garlic. Place in crock pot. Add beans, reserving 1/2 can. Smash reserved beans with a fork, then add to crock pot. Add chicken broth. Cook at low for 3-6 hours. Just before serving, stir in instant mashed potatoes. Top each serving with cheese and/or sour cream, if desired.
