Ingredients:
1/4 onion, chopped 1 can kidney beans, drained 1 teaspoon chili powder 1/2 teaspoon cumin 1 teaspoon mustard 1 teaspoon soy sauce 1 cup cooked and mashed sweet potatoes 1/3 cup water 2 ounces shredded cheddar cheese tortillas Instructions: Saute onion and garlic. Mash beans and add to onion. Add all spices, and heat through. Combine sweet potatoes and water, and heat through. Fill each tortilla with half bean mixture and half sweet potato mixture. Top with shredded cheese, and fold into burrito. Serve as is, or bake for 12 minutes at 350'. Top with diced tomatoes and sour cream if desired.
