Pumpkin Roll

 Ingredients:

	3 eggs
	1 cup sugar
	2/3 cup canned pumpkin
	1 tsp baking powder
	1 tsp lemon juice
	3/4 cup flour
	2 tsp cinnamon
	1 tsp ginger
	1/2 tsp nutmeg
	1/2 tsp salt
	Filling
	1 cup powered sugar
	8 oz cream cheese
	1/4 cup margarine
	1/2 tsp vanilla

Instructions:
	Beat eggs on high for at least 5 minutes
	Gradually add sugar
	Stir in pumpkin and lemon juice
	Sift together dry ingredients and fold into pumpkin mixture
	Grease 15x10x1 jelly roll pan and sprinkle with flour
	Spread batter in pan then sprinkle with 1 cup chopped nuts
	Bake at 375 fro 15 minutes
	turn cake onto a terrycloth towel that has been sprinkled with powdered sugar
	Starting at narrow end, roll towel and cake up
	Cool
	Unroll carefully and spread with filling
	roll up cake again, without towel, wrap in plastic wrap or waxed paper and chill
	slice and serve
