Ingredients:
1 1/2 oz diced bacon (optional)
1/4 medium onion, chopped
1 clove garlic, minced
1/4 cup apple juice
1 can cooked chicken, flaked
5 oz. artichoke hearts (packed in water) coarsely chopped
3 oz baby spinach
6 oz orzo pasta
1 tablespoon balsamic vinegar
2 tablespoons pine nuts
Instructions:
Saute onion and garlic. Add juice and cook 3 minutes.
Stir in Chicken, artichoke hearts, and spinach. Cover, and cook to warm through.
Cook pasta to al dente. Drain. Stir into chicken mixture.
Stir in pine nuts and balsamic vinegar.
