1/4 cup butter 2 pounds fresh sweet potatoes, pared and cooked in water until tender 1/4 cup maple flavored pancake syrup 1/2 cup salted sunflower nuts 1 parsley for garnish Instructions: Prepare potatos and cut into 2 inch chunks Melt butter in baking dish Add potatos, coating them with butter on both sides Drizzle syrum evenly over potatos Sprinkle on sunflower nuts Bake at 350 for 25-30 minutes
