Ingredients:
1 1/2 cup sugar 5 1/3 Tbsp cornstarch 1 1/2 cup water 3 egg yolks, slightly beaten 3 Tbsp butter 4 Tbsp lemon juice 1 1/3 Tbsp grated lemon rind Meringue 3 egg whites 1/4 tsp cream of tartar ?? Tbsp Sugar Instructions: Mix sugar, cornstarch and water in saucepan Cook over moderate heat, stirring constantly, until mixture thickens and boils Boil for 1 minute slowly stir half of the hot mixture into 3 egg yolks, slightly beaten Then beat into hot mixture in saucepan boil 1 minute longer Remove from heat Continue stirring until smooth Meringue Beat 3 egg whites and cream of tartar only until frothy throughout Gradually beat in sugar Continue beating until mixture is stiff enough to hold peaks that do not curl when beater is slowly withdrawn and inverted Blend butter, lemon juice, grated lemon rind Pour into baked pie shell spread meringue over filling being careful t seal it into edge of crust to prevent shrinking Swill or pull up points for decorative top Bake 8-10 minutes at 400 Cool slowly away from draft
