Coconut Cream Pie

 Ingredients:

	9 inch baked pie shell
	2/3 cup sugar
	1/4 cup cornstarch
	1/2 teaspoon salt
	3 cups milk
	4 egg yolks, slightly beaten
	1 tablespoon butter
	2 teaspoons vanilla
	3/4 cup flaked coconut
	1 cup whipping cream, whipped with sugar and vanilla
	1/4 cup flaked coconut, toasted slightly

Instructions:
	Combine sugar, cornstarch, salt, milk and egg yolks in saucepan. Bring to boil, stirring frequently. Boil one minute. Remove from heat and add butter, vanilla and 3/4 cup coconut. Cool.
	Pour pudding into pie shell. Chill. Just before serving, top with whipped cream and sprinkle toasted coconut on top.
