Challah Bread

 Ingredients:

	1 package yeast
	1/4 c warm water
	1/2 c lukewarm water
	1 T sugar
	1 t salt
	1 egg
	1 T shortening
	2.5 to 2.75 c flour
	1 egg yolk
	2 T cold water

Instructions:
	Dissolve yeaster in warm water. Stir in lukewarm water, sugar, salt 1 egg, shortening and 1.25 c flour. Beat until smooth. Mix in enough remaining flolur to make dough easy to handle.
	Turn dough onto lighly floured board; knead until smooth and elastic, about 5 minutes. Round up dough in greased bowl; turn greased side up. Cover; let rise until doubled (1-2 hours_.
	Punch down dough; divide into 3 equal parts. roll each part into strand, 14 inches long. Place strands close together on lightly greaed baking sheet. Braid gently and loosely. Do not stretch. Fasten ends; tuck under securely. Brush braid with shortening. Let rise utnil double (40-50 mins).
	Heat oven to 375'. Beat egg yolk and cold water until blended; brush over braid. Bake 25-30 minutes.
