Ingredients:
1/2 cup chopped walnuts or almonds
1 tablespoon olive oil
1 onion, chopped
1 teaspoon minced garlic
1/2 cup uncooked brown rice
1 1/4 cup chicken broth
1 pound fresh broccoli florets
1 cup shredded Cheddar cheese
Instructions:
Saute onion and garlic in oil. Stir in rice, add broth and bring to a boil. Reduce heat to medium-low. Cover and simmer until liquid is absorbed. Don't let it dry out.
Cook broccoli in microwave. Stir into rice. Add nuts and cheese, stir briefly.
